there's an italian word for wiping the bowl with bread until it looks washed: scarpetta. pakistan has known this move forever — it's roti and salan instinct, the conviction that sauce left in a bowl is a personal failing.
so every signature bowl comes with one heel of warm house focaccia and one printed rule: the sauce never comes back. the bowl goes back clean.
the focaccia takes that job seriously. it gets its own quality line in the kitchen — proofed daily, judged blind against the best bread we can buy before it earns its place on a plate, retired for the day if it isn't right. bread that exists for scarpetta can't be an afterthought; it's the last thing your dinner says.
